Produce Storage & Handling Basics
Fresh produce keeps losing shelf life from the moment it is harvested. Storage practices decide how much of that life is left when the product reaches the customer.
Group product by storage needs
Not everything belongs in the same cooler. Many items hold best near refrigeration temperatures, while others — including several tropicals and some vine-ripened items — suffer chilling injury when stored too cold.
Watch ethylene
Some commodities release ethylene as they ripen, and others are highly sensitive to it. Storing producers next to sensitive items accelerates ripening, softening and decay. Separate them where your space allows.
Protect airflow
- Do not block cooler vents with pallets
- Leave space between pallet rows
- Avoid stacking taller than the pack is designed for
- Keep doors closed and limit dock dwell time
Rotate deliberately
First in, first out only works if receiving dates are visible. Label pallets on arrival and audit rotation on a set schedule rather than by memory.

Optimal temperature and humidity vary by commodity, variety and pack. For a specific item, ask your Atlantic Fresh sales representative rather than assuming one setting fits the cooler.
