Fresh Produce Glossary
Produce has its own vocabulary. These are the terms that come up most often in sourcing conversations.
Sourcing and trading terms
- Shipping point — the location product ships from, usually in the growing region
- FOB — a price quoted at the shipping point, with freight handled separately
- Delivered — a price quoted with freight included to the destination
- Deal — the active growing and shipping window for a commodity in a region
- Gap — the period between one region finishing and the next starting
- Repack — grading and re-packing product into a different pack format
Quality and handling terms
- Cold chain — unbroken refrigeration from harvest through delivery
- Pulp temperature — the internal temperature of the product itself
- Shrink — product lost to spoilage, damage or unsaleable condition
- Ethylene — a natural ripening gas that some commodities release and others react to
- Grade — a quality classification applied at packing
Ordering terms
- Count — pieces per standard container, indicating size
- Ad volume — extra volume committed for a promotion
- Standing order — a recurring order at a set volume and cadence
- Substitute — an alternate item or pack accepted when the first choice is unavailable
